Orange Walnut Muffins

Description
Yet another recipe from my mom.
Ingredients
- 4 large oranges
- 4 eggs
- 1 c sugar
- 1 c butter
- 1⁄2 c sour cream
- 4 c unbleached flour
- 4 t baking powder
- 4 t baking soda
- 1⁄2 t salt
- 1⁄2 c walnuts
Instructions
- Preheat oven to 400 degrees. Grease muffin tins.
- Remove zest from oranges and set aside. Trim off and discard pith
and white membrane. Cut oranges into small chunks, saving the
juice, zest and orange together – it should be about 2 cups. Set
aside. - Lightly whisk eggs in a large bowl. Add sugar, butter and sour
cream and stir well. - Combine flour, baking powder, baking soda, and salt in another
bowl and stir to blend. Add orange and flour mixture to the egg
mixture and stir until blended. Stir in the walnuts. - Fill the muffin tins to two thirds full. Bake for about 12 to 15
minutes or until a wooden toothpick comes out clean when inserted
into the center of a muffin.
Notes
Serve this with orange butter:
1. Take one whole orange (unpeeled) and one pound of butter.
2. Cut orange in chunks (discarding seeds and ends only).
3. Place orange and butter in food processor and blend until smooth.
