Description
My mom's favorite pinto beans recipe.
Ingredients
- 1 1⁄2 lb dried pinto beans, picked over and rinsed
- 1⁄2 head garlic, chopped
- 1 1⁄2 T salt
- 1⁄4 lb bacon, cut into small dice
- 1 onion, diced
- 6 serrano chiles, chopped
- 1 tomato, diced
- chopped cilantro for garnish
Instructions
- Combine the beans and garlic in a large pot and add water to cover
by 2 to 3 inches. Bring to a boil over high heat and boil for 2
hours. After the first hour, check the water level and add a cup
or two of warm water if necessary. Allow 30 minutes before the
beans are cooked, add the salt. - Meanwhile, lightly brown the bacon in a large skillet over medium
heat, 4 to 5 minutes. Add the onion and chilies and sauté until
the onion is golden brown, 5 to 6 minutes. Stir in the tomato.
Remove from the heat. - When the beans are tender, stir in the sautéd ingredients and
simmer for 10 minutes longer. - Serve garnished with cilantro.
Notes
I tend to use more tomatoes.
