Description

My mom's favorite pinto beans recipe.

Ingredients

  • 1 1⁄2 lb dried pinto beans, picked over and rinsed
  • 1⁄2 head garlic, chopped
  • 1 1⁄2 T salt
  • 1⁄4 lb bacon, cut into small dice
  • 1 onion, diced
  • 6 serrano chiles, chopped
  • 1 tomato, diced
  • chopped cilantro for garnish

Instructions

  1. Combine the beans and garlic in a large pot and add water to cover
    by 2 to 3 inches. Bring to a boil over high heat and boil for 2
    hours. After the first hour, check the water level and add a cup
    or two of warm water if necessary. Allow 30 minutes before the
    beans are cooked, add the salt.
  2. Meanwhile, lightly brown the bacon in a large skillet over medium
    heat, 4 to 5 minutes. Add the onion and chilies and sauté until
    the onion is golden brown, 5 to 6 minutes. Stir in the tomato.
    Remove from the heat.
  3. When the beans are tender, stir in the sautéd ingredients and
    simmer for 10 minutes longer.
  4. Serve garnished with cilantro.

Notes

I tend to use more tomatoes.
